For a few months now, the residents of Alfortville have been lucky enough to enjoy a totally unique, high-quality restaurant in their charming town center. Cook & Lab is actually a multi-faceted venue: a restaurant serving traditional cuisine, but also a gourmet boutique and a place where culinary innovations and award-winning concepts are put into practice.
The recipes are developed by Daniel Anselm, chef and co-founder of the establishment, and the innovations presented in the dining room are the result of the work of Laurent Probst, a former chemical engineer. The program offers traditional cuisine blending culinary innovation with a spectacle on the plate. Among these innovations is the flambéing technique, which is nothing new (as it was very popular in the 19th and early 20th centuries) but has since disappeared from restaurants and family dinner tables.



At Cook & Lab, they practice modern flambéing, which takes place right at the table and offers healthy, spectacular cooking techniques when dishes are served. Another innovation to discover, for example, in this restaurant is the Green Cook: a cooking device that allows you to cook and flavor skewers of meat, fish, vegetables, etc., at the table in just 4 minutes, all without smoke or odors, thanks to a concentrated plant-based cooking elixir that, once ignited, also removes the fat contained in the food. The result? It’s tasty and healthy.
You can also enjoy Perlanova balsamic vinegar pearls in several dishes (delicious with salmon gravlax or tuna carpaccio) and discover the Cooketier, another spectacular cooking device that allows you to observe all the cooking stages of the delicious liqueur soufflé, the house’s signature dessert. A dessert you absolutely cannot miss under any circumstances, even during a heatwave—it would be a grave crime against your palate! Honestly, I don’t remember… no, really, ever eating a better soufflé than this one…
A very good address if you live nearby, but it could also be the perfect excuse for a little trip in the Ile-de-France region if you live in Paris—and let’s face it, Alfortville isn’t that far away by RER train…
