If you follow this blog a little, you probably know that I am originally from Lyon, and therefore I grew up learning to appreciate cheese and especially cheeses from Savoy, due to geographical proximity. I won’t hide my joy when I learned of the existence of a boutique in Paris, dedicated to Savoy products and especially Beaufort: COOP. The establishment is located in the heart of Saint-Germain-des-Prés, between the Odéon Theatre and the Luxembourg Gardens.
The goal of the Coopérative laitière du Beaufortain (the leading producer of Beaufort) in opening a boutique in the heart of Saint-Germain-des-Prés is to meet urban consumers to share, directly, the best products from Savoy at the best price. This collective structure brings together nearly 170 farmers from the Beaufortain region! The star of this place is, therefore, Beaufort, a unique raw whole milk cheese, which has held AOC status and been known for its high mountain taste since 1968, but also a selection of gourmet products from Savoy (other cheeses, wines, charcuterie, meat, crozets, honey, jams, etc.).
On the ground floor of COOP, you will find the boutique, which offers a wide selection of cheeses (Beaufort, Reblochon, goat’s, sheep’s, and cow’s milk Tomme, St Félicien, Tomette, etc.) as well as charcuterie, meat, wines, jam, honey, crozets, and more, all coming straight from the Savoyard alpine pastures with an unbeatable price-quality ratio.
The tip: On level -1 in a beautiful vaulted room, you can also enjoy the Cheese Bar, a place for tasting and discovering the cheeses and wines sold on the floor above.
In this cellar, you can also admire the cheese wheels stacked in the cheese cellar, kept at a temperature of about 10° to preserve their taste qualities.
