Tasting Pierre Marcolini‘s chocolates is not just a sensory experience; it’s also about discovering the world and the high standards of a true chocolatier, from the aromas of roasting cocoa beans to the perfection of his chocolate creations. What makes Pierre Marcolini original is that he positions himself as a chocolate creator, in a field where there are so many “processors,” as he calls them.
It was by visiting the new boutique (the 3rd in Paris) of this chocolate artisan on rue du Bac that I discovered and learned the subtleties of this profession. I listened with passion to the story of this creation, just as one listens to a winemaker talk about their wine. We often consume wine in harmony with the story that accompanies it; this is not frequently the case with chocolate, and that’s a shame!



Pierre Marcolini, the most French of Belgian chocolatiers, has been working with the cocoa bean for 10 years in “bean to bar” mode. Concretely, this means that he produces his own chocolate himself, starting from the cocoa bean. Selection, roasting, grinding, conching—all steps of the manufacturing process are mastered by the master chocolatier! This new 20m² boutique was designed as a gourmet boudoir dedicated to chocolate, highlighting the cocoa bean in all its forms, as evidenced by the cocoa wall. The chic and contemporary decor highlights the radiance of the chocolates and treats found in the shop.
