In November 2018, the favorite photographer and I made a wonderful culinary discovery when we tested the bistro of the young Courbevoie-based chef Pierre Lambert, naturally located in Courbevoie. He opened this Bistrot Pierre Lambert, located just across from the Bécon park, in 2016. In December 2025, we returned and once again tested his Courbevoie restaurant, which is now called Audass 2.0. The restaurant’s setting is extremely minimalist, simple, and friendly—much like the host himself, I would say, who, in addition to working in the kitchen, also handled table service and explained all the dishes to the guests during our visit in 2018.

In his second bistronomic restaurant, the chef offers tapas and plates to share in a friendly, exploratory spirit. That evening, we tasted: the delicious Cambodian-style salmon (€16) that melts in your mouth; the octopus, seaweed, and cucumber salad (€18); the super-airy hummus (€12); the open-heart Calzone (€14), with ham and egg, which captures nothing but the taste of that famous folded pizza; our favorite of the meal, the seared foie gras sushi, a real killer (€22); as for cheese, we were blown away by the camembert and wasabi soup (€9). Finally, for a light and playful dessert, I recommend the yogurt and black olive cotton candy (€8), which always makes an impression.

Price: tapas to share between €8 and €22 (recommendation to have between 3 and 4 savory and sweet tapas per person) / wine by the glass between €9 and €10

On the plate, we find inventive and unique cuisine that really won us over, the favorite photographer and I. In this restaurant, there is no menu, only blind menus that the chef enjoys putting together each week, inspired by the market and his own mood. Following the principle of this blind menu, you simply announce your allergies before starting the parade of dishes to ensure there are no bad surprises, and then everything is just discovery and astonishment! The dishes follow one another very quickly and there is no waiting at all between services. We absolutely loved this creative spot with the favorite photographer, and the concept of letting yourself be guided by the chef’s universe makes for a very successful gastronomic journey, I think. There is a real finesse in the marriage of textures and flavors, where, by the way, Asia plays an important role.

The blind creation menus:

  • 3 amuse-bouches + 3 dishes €48 (+ €24 with 3-glass wine pairing)
  • 3 amuse-bouches + 4 dishes €54 (+ €32 with 4-glass wine pairing)
  • 3 amuse-bouches + 5 dishes €62 (+ €40 with 5-glass wine pairing)

To taste:

  • Amuse-bouches to start the meal and whet your appetite, and a delicious Côte des Bar Champagne by Julien Prélat to accompany it all.
  • The surprising appetizer with foie gras, if I remember correctly, and a revisit of an Asian broth.
  • The dish with fish.
  • A very original dessert to finish this delicious lunch, a 100% vegetable revisited taco accompanied by chili ice cream and a few chocolate treats with the coffee.

The great tip: the Lunch menu with appetizer + main or main + dessert at €38 (+ €15 with 2-glass wine pairing)
