Nitrogen ice cream, my top spots in Paris

To enjoy the last few days of summer (yes, given the mixed summer we’ve had, I think the sun granted us a special dispensation for the end of August), it’s time for me to share my new selection of top spots in Paris to enjoy some delicious ice cream during the summer season, but also throughout the rest of the year!

Unfortunately, due to a Parisian summer that looked suspiciously like a Parisian autumn, I haven’t had the chance to test many new ice cream parlors, so in this article, I am presenting only 2 spots featuring ice cream made with liquid nitrogen, the new trend in the field.

A bit of history: it was the Chinese who first succeeded in preparing ice cream with snow. They passed their secrets on to the Persians and Arabs, who in turn introduced them to the Italians. The latter introduced them to the French royal court via Catherine de’ Medici.

Nitrogenie

Nitrogenie is one of the first French brands to offer liquid nitrogen ice cream, and you must have noticed that this trend is developing significantly in the capital. As proof, I am introducing two brands that offer this type of ice cream in Paris in this article.

This manufacturing technique is often used by great chefs, because nitrogen allows for a creamy texture and preserves the flavors. The establishment offers you a made-to-order ice cream cooled with nitrogen right before your eyes (the spectacular side also plays a lot in the overall impression, and it is very entertaining).

To try: the “Lemon Meringue Pie” flavor in a small cup

Ice cream prices: cone €4.50 / cup between €5 and €9 depending on the size

N2 Extreme Gelato

N2 Extreme Gelato is an ice cream company recently established in France that also makes ice cream with liquid nitrogen, a molecular cooking technique used for several years by the greatest chefs, as I mentioned just above. The use of nitrogen gives the ice cream a very creamy and smooth texture while allowing the ice cream to be created on demand, preserving the freshness and quality of the product. The venue also offers excellent Emile Vergeois artisan juices (€4).

How it works at N2: you choose your base, and you serve the toppings yourself!

Price: €4.50 for a small cup and €6 for a large cup

The little extra: the stand has a terrace area with tables and chairs to sit back and relax, which is quite nice.
