Generally speaking, I love fish; I was raised in a family that definitely ate more fish than meat, and I have kept that taste for seafood, if I may put it that way. In short, I love salmon and all its derivative products. So I was completely in my element following an invitation to discover the boutique in the Marais, Autour du Saumon.
Autour du Saumon consists of 6 addresses in the capital, created in 2006 by Didier Trentacosta, who has established himself as the go-to expert for Nordic products.
The concept: a selection of the best products (caviar, salmon, spices, olive oils), a choice of salmon from different origins, a cellar with a great list of spirits from the cold, and 5 luxury delicatessens, 2 of which feature a tasting area.

I went there to discover the new formula of their restaurants, with the gourmet menu (a starter, a main course, and a dessert, all for €49), served at lunch and dinner in the 2 tasting areas.
Admittedly, the price is not cheap, but it’s not every day that one has the opportunity to eat food of this quality, nor to discover French caviar! I actually learned on this occasion that you taste caviar with mother-of-pearl spoons, so as not to alter the taste…
On the menu:
- an amuse-bouche with Baeri caviar
- 5 fresh starters to choose from: Layered avocado and fresh salmon tartare, Trilogy of taramasalata, Salmon sashimi with sesame, Fresh smoked salmon pie with citrus fruits, Declination of Danish marinated herring
- 5 main courses to choose from that feature salmon in all its forms: Plate of smoked or marinated salmon, Salmon steak marinated in dill ‘Gilbert Bécaud’ style, Roasted salmon steak with teriyaki sauce and sesame, ‘Bradan Road’ hot smoked salmon steak, and Tartare of two salmon, hand-cut
- 5 sweet desserts to choose from: Flambéed Baked Alaska (very special mention for the omelette, a must-try and finally not as heavy as that!), Chocolate fondant, Compote of the moment, Speculoos cheesecake with salted butter caramel, a selection of delicate ice creams and sorbets
