To celebrate (and motivate) the return of sunny days, I want to talk to you about PeGast, a French sandwich shop chain that offers high-end products. This fast-casual brand totally stands out from its competitors with a super original menu and recipes created by the brand’s co-founding chef, Jean-Philippe Peillon (formerly of Robuchon).
If you feel like eating a gourmet sandwich, completely different from what you usually have, you absolutely must try this establishment that revisits the classics of traditional French cuisine in sandwich form.
During this winter, the chef shared his fables by highlighting rabbit, duck, and pumpkin, while the spring menu has been themed around flowers, grains, and wild herbs.


To try / sandwiches:
- The Cendrillon with pumpkin, turkey gizzards, and chicken
- The Percheron with poultry liver and cider-poached apples
- The Hunter’s Rabbit with a mushroom-rabbit recipe
- The famous pot-au-feu and beef bourguignon sandwich

- The Bonita with tuna and red tapenade
- The Summer sandwich with fresh tomatoes, mozzarella, and house tapenade
PeGast also offers salads for those who want a lunch that is, let’s say, lighter…
To try / salads:
- “The Egg, the Pig and the Winemaker”, a creation based on poached eggs in meurette sauce with lardons
- “The Goat, the Duck and the Artichoke”, a salad mixing goat cheese, white wine artichoke hearts, and duck confit
- “The Flower and the Bacon”, a creation made with bacon chips, radishes, and edible flowers
- “The Antipasti salad”, a vegetarian and gourmet plate of marinated vegetables
As for desserts, we are not left out, with a Carambar crumble that sticks deliciously to your teeth (well, that’s what I was told, because with my teeth I wouldn’t risk it…), a speculoos cream (I tasted this one, it’s super good), a lemon crumble, or even a mendiant delight made with nuts and candied fruits.
The brand already has 27 shops open in Paris and across France (in Aix-en-Provence, Grenoble, Calais Cité Europe, Lille, Strasbourg, and on Reunion Island).
The little extra: throughout the month of April, PeGast is partnering with Michel et Augustin and for the purchase of a ‘PeGast’ or ‘Gaston + a Michel et Augustin cookie’ set menu, everyone is invited to play Rock Paper Scissors* with the server… and can win two extra little squares!
