Looking at my Brunch section, I realized that it had been quite a while (since November 2017) since I had written an article on the subject for the blog…
This time, I’m taking you to discover Trois Bis, the bistronomic canteen by Bruno Viala, set in a rather innovative Parisian cultural venue, the Gaîté Lyrique. I admit that it’s an establishment I haven’t had much of an opportunity to frequent until now, but this little brunch made me really want to come back!


To put things in context, Bruno Viala started in 2016 with his bistronomic canteen concept within the Montreuil-based creators’ hub ICI Montreuil and in 2017, he invested in two new Parisian addresses: the Gaîté Lyrique with Le trois bis, and the new Place d’Italie theater Le 13ème Art (which has become my go-to for shows) with the Cantine du 13ème Art, which I will tell you more about soon on the blog.
In terms of cooking, the recipes are made with fresh market produce and there is a very responsible aspect to his projects, as the dishes are mostly served in cardboard containers with wooden cutlery (the restaurants are also partners of the anti-waste app that I find really great: Too Good to Go).



Coming back to the brunch, it is offered every Sunday from 12 pm to 4 pm in the superb historic foyer of the Gaîté Lyrique. It is an all-you-can-eat buffet with four types of brunch to mix according to your desires (there really is something for everyone) and the products are truly high quality.
The brunch offer:
- Sweet: pastries, cupcakes, mini pancakes, yogurt verrine, muesli, fruit salad, maple syrup, honey
- Traditional: fresh baguette, country bread, jams, butter and spreads, cheese platter
- English breakfast: herb poultry sausages, bacon, baked beans, scrambled eggs, salad of the day
- Healthy breakfast: salmon marinated in thyme, assorted vegetable pickles, quinoa, ginger fava beans, green tabbouleh









As you can see in the images, all this is super appetizing. The only small criticism I could make about this brunch is that the selection of hot drinks is a bit too limited for my taste (thermoses of tea and coffee).
Brunch prices: 14 € for children and 26 € for adults
