Les Chouettes, discovering the new menu

I already told you about the restaurant Les Chouettes at the beginning of 2016 on the blog. It is a stunning Parisian address in the heart of the Marais that was one of our gastronomic favorites at the time. So, we returned to Les Chouettes at the beginning of 2018 with my favorite photographer to discover the menu imagined by the establishment’s new chef, Benjamin Mathieu. Of course, whenever we return to a place that left us with such fond memories, there is always a secret fear of being disappointed and not feeling the magic of the “first time.” Fortunately, that was not the case for Les Chouettes, and we happily rediscovered the charm and quality of this unique establishment.

The decor of this restaurant is still just as incredible, with a main room that is very bright, sheltered under a magnificent Eiffel-style iron and glass canopy, 20 meters high. The restaurant spans two other floors under the famous canopy, with an atmosphere and decor that make you feel like you are on vacation on the deck of a cruise liner.

On the plate, the new chef lives up to what we had experienced here before, offering us a classic yet very refined bistro cuisine with extremely successful blends of textures and flavors. Once again, the menu is short (7 appetizers, 7 mains, and 5 desserts), which is always a hallmark of quality.

To taste:

  • For an appetizer, the perfect egg with mayo, chives, and mimosa (€9).
  • For ceviche lovers, the chef offers one with scallops (€16) that is to die for!

  • For the main course, we tested the fish, the semi-cooked tuna with baby spinach in vinaigrette and pickles (€25).

  • For meat, we were won over by the crispy veal sweetbreads, covered in Lardo di Colonnata, with parsnips, capers, and candied lemon (€32).

  • For dessert, we really loved the deconstructed yuzu meringue tart (€9) and a dessert of the day whose name I forgot, but which was just delicious!

A little extra: an interesting selection of wines as well as a choice of wines by the glass, which I always particularly appreciate.

The tip: a lunch menu for €19 with main-dessert / and €24 with appetizer-main-dessert (Monday to Friday)
