The truffle is a noble product that we don’t eat every day, far from it. Along with caviar, it is one of those delicacies that we reserve for special, or even exceptional moments. What I love most about the truffle is its raw flavor. One of my fondest memories of tasting truffles is actually that day when my dad simply (so to speak) made us a little omelet with truffle shavings. I’m still salivating just thinking about it… L’Artisan de la Truffe is, therefore, the temple of this mysterious and hidden tuber, which, due to its rarity and the difficulty of finding it, has become a highly sought-after and therefore expensive product.
This establishment allows you to discover several varieties of fresh truffles selected throughout the year: the black truffle (tuber melanosporum), the white truffle (tuber magnatum), the summer truffle (tuber aestivum), the winter truffle (Tuber Brumale), the Burgundy truffle (Tuber Uncinatum), and even the Australian black truffle. It is, therefore, a great opportunity to learn more about this black diamond and to rediscover all of its flavors.
The brand has several addresses in Paris, and I have already had the opportunity to discover two of them: the BHV Marais corner and its latest (and third) Parisian address in the Beaubourg district.

Artisan de la Truffe Marais
This third Parisian location, situated in the Marais, has a small, very pleasant terrace for sunny days, and the interior dining room is quite long.
Must try:
- For starters, we had the artisan board to share (€12) with cheese, charcuterie, and tarama, all with truffle, of course!
- In 2021, I also tested the chestnut and mushroom soup with truffle (€13).
- For a pasta dish, I tried the truffle ricotta tortellini (€20) with parmesan cream.
- For a more summery dish, our favorite photographer and I loved the truffle Sea Bream Ceviche (€23), which I highly recommend.
- Their croque-monsieur de l’Artisan with Le Bellocq artisan ham, farmhouse truffle gouda, and truffle béchamel (€16) is, I have to say, absolutely killer!
- For dessert, I recommend their Floating Island with caramelized pralines (€9).
The tip: the lunch menu from Monday to Friday with a choice of 3 dishes + coffee or gourmet tea for €22

The Artisan de la Truffe Corner at BHV Marais
The brand offers fine grocery products based on and featuring truffles, distributed in its corners within gourmet shops in Paris and the provinces. In its corner on the 3rd floor of the BHV Marais, it also has a small tasting counter. That’s where we went to test some of their products.
Must try:
- In the choice of starters, we really liked the soft-boiled egg with truffle (€13) with a mushroom fricassee, baby spinach, toasted brioche, parmesan cream, and fresh seasonal truffle shavings.
- For the main course, I highly recommend the truffle tagliatelle (€18) with a great creamy parmesan sauce and fresh seasonal truffle shavings, which are absolutely delicious!
- Another very tasty dish is the truffle risotto (€19) with fresh seasonal truffle shavings and arugula.
- We finished this lunch with an ephemeral dessert, a chocolate and truffle éclair signed by pastry chef Christophe Adam, and therefore, obviously, made in partnership with L’Éclair de Génie (€8.50). I recommend pairing it with a small coffee (€2.80), and it’s perfect!
