Saucette is exactly the kind of place I love, with a concept that is as simple as it is noble: elevating the sausage (no laughing, food is a serious subject!). And the icing on the cake (or should I say liver cake? Okay, I’m going now), Saucette does it with a great sense of humor and a totally offbeat vibe. In such conditions, it’s hard to resist!
Vegetarian friends, you’ve probably gathered by now that this post is clearly not for you. I’m sorry about that, so please feel free to move along this time.

The concept of Saucette (I never tire of saying that name): a Haute Saucisse bar in the heart of Paris, right next to the Centre Pompidou in the 3rd arrondissement. It’s the perfect opportunity to combine gastronomy and culture by taking a quick museum tour after leaving the restaurant, which is exactly what we did when we went to test the place out.
This warm and friendly sausage bar/restaurant offers high-quality products sourced from producers who share the same mindset.




The homemade sausages produced on-site by Saucette are actually quite healthy, because they prioritize the noble parts of the meat without excess fat. As someone who doesn’t like greasy sausages, I was completely won over.
On the menu, there’s a traditional section with regional specialties (black pudding from Mortagne-au-Perche, the traditional Strasbourg sausage by Thierry Schweitzer, or mini andouillettes from Lyon by the Quiblier family), as well as homemade creative recipes to discover!
To try:
- The Socis Redding (€8.50 on its own), a homemade sausage made of marinated beef and sesame seeds with an Argentine chimichurri sauce.

- Sisisse l’Impératrice (€8.50 on its own), my big favorite of this tasting; a homemade creation with a pork sausage and herb pulp, served in a black bun with squid ink, lettuce, homemade pickles, and a smoked paprika sauce. A must-try!



For sides, you have a choice between fries, mashed potatoes, a salad, or sauerkraut. And on top of all that, they bring you a tray with lots of different homemade sauces, all delicious!
- For dessert, we treated ourselves with our coffee to the delicious homemade brownie (€3.50), perfect for finishing this gourmet lunch.



The extra touch: some very nice sausage/beer pairing suggestions (we tried it with the Vedett, which is available on tap).


Great deal: the menu for €13.50 with a sausage + a side + a drink.
