Christmas is coming soon and I am continuing my series of articles on this theme. Today, I am going to make your mouth water (well, I hope so…) with my selection of gourmet products to enjoy during the holiday season. Because personally, I find that one of the great pleasures of this festive period is definitely Christmas gastronomy. It is the perfect opportunity to delight our taste buds and our eyes with refined dishes that are often more expensive than what we usually eat. But then again, these are special moments and you have to know how to enjoy them, and this year is certainly no exception, quite the contrary!

Savory holiday products
Caviar
A few years ago, I wouldn’t have been able to tell you if I liked caviar or not. It is such an expensive delicacy that it’s quite unlikely to be able to taste enough to form an opinion on its taste. Well, now after quite a few tastings, I’ve made up my mind: I have expensive tastes and I really like caviar, especially Beluga, the most expensive (because it is rare) of them all.
When it comes to caviar, you should know that the size and color of the eggs vary depending on the species of sturgeon they are extracted from, but also according to the preparation method and the selection of the eggs. These changes affect the taste and texture of the caviar. The price is obviously set according to the scarcity of the production. Like all seafood, it is a delicacy that smells of iodine and salt, so that might give you a hint about your taste in the matter. Personally, I find it a very fine and tasty dish, but I completely understand that some people don’t like it at all; when it comes to our palates, we are all different.
My tasting advice: the royal serve, on the back of the hand so that the aromas of the caviar are not interfered with by the taste of a spoon for example / otherwise you should use a mother-of-pearl spoon.

Aquitaine Caviar PGI
Aquitaine caviar has obtained its PGI (Protected Geographical Indication) since February 2025, the result of more than 10 years of work and a consecration for an exceptional know-how, a symbol of the French art of living. If you want to consume caviar at Christmas, but you also want to consume French, it is an essential label to keep in mind. And at the heart of this PGI, you will find several producers from Aquitaine (Caviar Perlita; Caviar Prunier; Sturia; Caviar de France…).
We were lucky, along with my favorite photographer, to discover this brand-new PGI during a Parisian evening and to also attend a masterclass and workshops to learn how to cook it very simply, in order to preserve all its flavor. Even though personally, I still prefer to taste caviar alone, to fully enjoy all its flavors…









Aquitaine Caviar

Caviar de Neuvic
This French producer of caviar, located on the banks of the Isle, offers a quality product, made with respect for the fish (quality water, organic feed, low density, and little handling) and environmental balance. The House offers a complete range of caviar and fish roe. What I particularly appreciate in their commitment is also the desire to maximize the value of the sturgeons by using the entire product and not just the eggs to make the caviar (for example, the skin is used to make collagen for cosmetics, the head, fins, and tail are transformed into fillets, steaks, rillettes, bouillabaisse, or even sturgeon velouté). 95% of the sturgeon is utilized and the rest is composted.
The products: since 2021, Caviar de Neuvic has offered a range of organic caviar (but also other products such as smoked sturgeon, fish roe, or sturgeon rillettes) which is the culmination of its sustainable commitment (€59.50); another 2021 novelty, “la Touche caviar” (box of 4 units + 1 grater), a Caviar de Neuvic innovation that offers a culinary aid resulting from a long drying process and that allows you to embellish simple dishes (scrambled eggs, mashed potatoes, pasta, rice…) with a nugget to grate over a dish.

Caviar Perle Noire
This French caviar is produced by an artisan breeder in Les Eyzies-de-Tayac in the Périgord Noir. Their fish farm is located in a Natura 2000 area in the heart of a preserved ecosystem. The open-circuit basins are fed by a small stream, the Beune, whose water is classified as first-category for fish. The brand is also involved in a sustainable production approach, so it also promotes the flesh of its fish by offering a gourmet range of derived products (caviar butter, trout roe, trout and sturgeon sashimi, trout and sturgeon spreads).

Pairing idea: Sturia caviar & GDP Whisky
For the holidays, I propose a pairing combining elegance and refinement: the encounter between GDP Whisky Pure Malt (made from 100% French barley and aged in barrels), the new range of French fruity whiskies from Grandes Distilleries Peureux, and Sturia Oscietra Caviar. This bold combination was imagined by Pierre Boueri, mixologist for Grandes Distilleries Peureux. The marine flavors and buttery notes of the caviar pair with the fruity and spicy aromas of the Whisky.

Foie gras
Make your own foie gras
Five years ago, Maison Ernest Soulard, specializing in duck meat and foie gras for over 80 years, challenged us by sending us raw duck liver. Along with my favorite photographer, it was an opportunity to try preparing a foie gras terrine from raw duck liver for the first time. The little extra that really helped us was working with frozen deveined raw duck foie gras. Even though we had spent time watching a video on the internet to know how to devein a foie gras, I must admit that the fact that the main veins were already removed greatly facilitated the work… This liver, weighing about 500g, was perfect for making a terrine and I must say that we were quite proud of ours!
The tip: you can absolutely make your terrine in advance and after cooking it keeps without any problem for 15 days in the refrigerator.

In 2021, the marbled duck foie gras with black truffle (3%) was the flagship product of Maison Montfort, which offers the combination of these two iconic dishes of French gastronomy.

Oysters
For many years, I didn’t eat oysters, but since my trip to Saint-Jean-de-Monts in 2015, I have become a fan of this very special dish. I am always delighted to eat them for the holidays, then. And in 2021, for the first time, I even learned to open them myself (thanks to the YouTube tutorials!), I was very proud of myself.
I also discovered a classic but essential pairing: Champagne (here a Delamotte Blanc de blancs) and oysters (from Yvon Madec) and I must say it works very well! I also tried pairing this Delamotte Champagne with other seafood products like Yurrita canned goods (with white tuna) and it also results in an unexpected and very interesting combination.









Another pairing with oysters for these holiday meals: I suggest accompanying this briny dish with the Muscadet Sèvre et Maine vintage from Dumnacus Vignerons. And to open the oysters, we also received this super knife from an artisan cutlery shop in Anjou from the Atelier d’Affutage et de Coutellerie, located in La Possonnière.

Truffle
Plantin products
This brand, which has existed since 1930, is specialized in the art of truffle and mushroom products. The company even opened a truffle institute in 2019, located in the heart of Puyméras in the Vaucluse. For the holidays, we discovered several of its products:
- The preparation for winter truffle scrambled eggs (15%), super practical and very simple for preparing a good scrambled egg with truffle flavors (price €16.50).
- Black truffle shavings, made from a black truffle already finely chopped (price €29), ideal to incorporate into a simple dish like risotto, scrambled eggs, mashed potatoes, or fresh pasta.
- Extra virgin olive oil flavored with black truffle with pieces (price €17.50), to delicately perfume preparations: mashed potatoes, vinaigrette, pasta…

- For the holidays, the chip brand Tyrrells, located in picturesque Herefordshire and founded in 2002, revisits its flagship Truffle & sea salt recipe (price: €2.95) by making it more intense.
- The brand Lay’s also offers a “black truffle flavor” recipe (price €2.25) in its new festive range with a kettle-cooked process.
- The artisan and family-owned chip brand from Beauce, Belsia, which has been making artisan kettle-cooked chips since 2016 (products without gluten, preservatives, coloring, artificial flavors, and palm oil), also offers a summer truffle range, La Chips de Clémence.

This brand, which has existed since 1932, offers a range of premium chips for the holidays this year, cooked slowly in a kettle-style manner in very chic black and gold packaging. There are three signature recipes: Nature – Classic Cut; Black Truffle Flavor – Fine Cut; Herbs of Provence Flavor – Ripple Cut (price: €2.25 per bag).

The Isigny Sainte-Mère brand offers an ephemeral range for the holidays to enhance festive tables. Papillotes
The legend of papillotes: It was in 1790, in the shop of the Lyonnais pastry chef Sieur Papillot that the papillote was born. The latter realized that his apprentice was stealing chocolates to add sweet notes to them and send them to the chocolatier’s daughter, whom he was in love with. Sieur Papillot later took inspiration from this to create papillotes by replacing the sweet notes with quotes, proverbs, and other riddles and wrapping his chocolates in them.

I don’t know if it’s a tradition particularly rooted in the Lyon region, but I can’t imagine a Christmas without papillotes, just because it’s unthinkable in my family! And then once again, surely because of my Lyonnais roots, for me papillotes are Révillon, since the chocolatier also comes from the capital of the Gauls. This house, founded in 1898 in Lyon, perpetuates French know-how through 110 original recipes. In 2022, the brand renewed itself by adopting a new, more modern logo and committing to a more sustainable approach, notably by deciding to remove palm oil from these papillote recipes.
My little pleasure: eating the papillotes placed at the foot of the tree, on Christmas morning, while opening my gifts with my parents.

Boissier Paris
This house originates from a master confectioner, Bélisaire Boissier, created in 1827. The latter was indeed at the origin of the glazing of chestnuts, a new technique he initiated to stop the decomposition process of a train full of chestnuts at Gare de Lyon, the cargo of which was starting to spoil. He then applied this technique to other confectionery products. Its specialties were therefore, among others, the candied chestnut but also the ball candy, a classic of the 19th century. The house was bought at the end of the 20th century by Sylvie Douce and Françoise Jeantet, the founders of the Salon du Chocolat and lovers of exceptional products.

Christmas shortbread from Biscuiterie de l’Abbaye
In its workshop located in Lonlay-l’Abbaye, in the heart of the Normandy countryside, the Biscuiterie de l’Abbaye perpetuates the family history started over a century ago. Thanks to the know-how of its bakers and pastry chefs and the use of regional raw materials, the biscuit factory has managed to preserve the artisanal quality of its original bakery. I have already told you several times about Maison Barthouil. This human-sized company comes from the South-West (Les Landes to be more precise) and everything is manufactured there. The house was created in 1929, in Peyrehorade, by Gaston, the grandfather, then managed by Jacques the father, and today it is the daughters, Pauline and Guillemette, who are in charge, driven by the same passion and the same philosophy: to use artisanal methods to achieve excellence.
To taste:
- The Maison Barthouil smokes all its salmon, wild, farmed, or organic, according to a method learned in Denmark in the 50s: with alder wood, hanging, and cold. It is still the only one to this day to smoke Adour salmon.
- The house’s taramas (plain or crab), which are absolutely delicious!

Arkose Winter Beer
The Oskare brewery is not just any brewery. It takes its name from the anagram of Arkose, the group of climbing gyms I have told you about several times on the blog. This beer is therefore brewed within these “climbing lofts”, we can even go watch the inside of the brewery at Arkose Nation after a climbing session through the windows that separate the training area from the brewers’ workshop. This winter beer is a brown spicy ale crafted in Paris with an intense color, spicy notes of pepper, ginger, and heather. The Oskare brewery received the “Fabriqué à Paris” label in 2020.

Champagne and sparkling wines
Regarding Champagne, you know that it is a subject that is close to my heart and that I have developed several times on the blog. I have also traveled to this region several times to discover the products!



On one side, we have the big names of Champagne like Laurent Perrier (with whom I had already collaborated to help you win a night at Okko hotel if you remember) with its Cuvée Brut below (€37.80 per bottle).


You have big Champagne houses with very well-known names, but there are also more confidential houses that work differently to offer unique and unprecedented taste experiences found under the name Champagne de Vignerons. I have been talking to you about this collective of winegrowers and Champagne cooperatives for several years because I find that the work they do is admirable and I am committed to supporting this type of approach.
Example: Benoit Beaufort Champagne, Brut Tradition non-vintage (price €16.20), Montagne de Reims; E. Lacour Champagne, Montagne de Reims blending rosé (price €19); Marie Tassin Brut 100% pinot blanc Champagne; J. Pierron Leglise Champagne, blanc de blancs brut cuvée (€15.80).






Like the previous years, I am again presenting a bottle from the Champagne Grémillet house because I really like this family brand which is located in the Côte des Bars (which I have already told you about specifically on the blog). This year I am presenting their new Grand Cru cuvée, a 100% chardonnay from a single harvest year, 2015, and only from the first pressing (€33).
I am also presenting the Champagne Pierre Mignon house which collaborated with me for my 2021 Advent calendar by offering a nice prize to give away to my community on Instagram and which makes very beautiful products.



Another possibility, you can opt for sparkling wines which will give you the bubbles, but at much more reasonable prices if you don’t have the budget for Champagne. For example, it can be a great tip to think of Crémants: Crémant d’Alsace (with the very pretty bottle Cousu Main by William Arlotti for Caves de Turckeim at €12); Crémant de Bordeaux; Crémant de Bourgogne (very beautiful vintages from Veuve Ambal for example, see below); Crémant du Jura; Crémant de Limoux; Crémant de Loire, or fine Loire bubbles as they say too (Maison Ackerman since 1881 and the Monmousseau house)…
I also discovered other sparkling wines like the 002 Bulles cuvée from UBY, a family winery located in the heart of the South-West vineyards in Cazaubon in the Gers, which produces fresh and gourmet wines characteristic of Côtes de Gascogne wines.

Sweet wines
Since last year, I have discovered the Christmas Muscats that I like to present to you on the blog. These are naturally sweet wines produced from Muscat de Rivesaltes, traditionally marketed on the third Thursday of November. This wine is generally served during the holidays, with foie gras, cheese, or to accompany a Christmas log, but it also tastes very good until February, with crêpes for Candlemas, carnival fritters, or the King’s Cake.
Another idea for sweet wines: since last summer, I discovered the Pacherenc du Vic-Bihl, a sweet wine from the South-West produced across the Gers, the Hautes-Pyrénées, and the Pyrénées-Atlantiques and of which I immediately became a fan!
