It was on the Left Bank, in the 15th arrondissement of Paris, that I went to discover the FRAME brasserie, attached to the Pullman Hotel, and at the same time, took a little culinary trip to California. And yet, I was right in the heart of the capital and just a stone’s throw from the Eiffel Tower… This little miracle is thanks in part to designer, interior architect, and scenographer Christophe Pillet, who imagined an extremely pleasant, modern, and elegant living space, with a mineral decor featuring shades of warm grey, highlighted by colorful touches, but also thanks to the Californian cuisine twisted with French flavors served by the young chef, Andrew Wigger.
Since the chef grew up in northwestern Missouri, this brings a blend to the Brasserie’s cuisine with sweet and savory dishes, Mexican influences, spices—in short, a mixture that excites the taste buds. Furthermore, all ingredients come from local producers or are grown and then harvested in the brasserie’s vegetable garden. Thus (and this will become a recurring example since I already mentioned it for the Gray d’Albion in Cannes and the Hyatt Madeleine), the honey used in the kitchen is produced by the 8 hives placed on the roof of the building housing the restaurant.









A must-try:
- The unmissable burger (€19) with revisited flavors: Gruyere, tomatoes, red pepper jam, and arugula, accompanied by fried avocado cubes and homemade cilantro aioli.
- The So Cal Quesadilla Tinga (€12) with chicken, Brie, Emmental, roasted corn salsa, crème fraîche, chips, and guacamole.
- Revisited spring rolls (€11), ginger rice, sesame puree, cucumber & wasabi sauce.
- The delicious “She’s cake” by Sephora Saada (€11), which changes regularly according to the seasons.
With its open kitchen, private area, bar, vinoteca, and pleasant summer terrace, this Franco-Californian brasserie offers a comfortable setting in the West Coast spirit. The appeal of the place also comes from its bar, which unveils a selection of original cocktails (with bold flavors and homemade ingredients) and French or international wines by the glass, to be chosen at the Vinoteca (a wine dispenser), from about fifteen wines selected by one of the best sommeliers in the world, Olivier Poussier. In short, whether it’s to grab a bite or have a drink, it’s a place where you want to settle down and enjoy the time, with friends or as a couple, to step away from Parisian stress even for just a few hours.
